About this deal

This is where vermouth comes in: it has a screw-top lid, keeps well, and has a transformative effect on anything you care to splash it in. On the nose there is slightly oaked mistelles with herbal aromas, balanced with floral notes and hints of chamomile. The aromatic herbs and spices used in the creation of Noilly Prat Original Dry include Roman chamomile and gentian from France, nutmeg from Indonesia and bitter orange from Tunisia.

Wine that was transported long distances in barrels and exposed to the weather became darker in colour and fuller-flavoured.

In 1855, his son Louis Noilly and son-in-law Claudius Prat set up the company that became Noilly Prat, moving the business to Marseillan where it remains to this day. Fortified, mellowed and flavoured with herbs and spices, it doesn’t – unlike wine – need to be cooked out patiently to give a smooth, rich wineyness: the impact is near-instant. Brought back inside and left to rest for a few months, the wines are then blended together into oak casks.

As for the taste itself, the finesse and delicacy of the white wines lead to a complex mouthfeel, with notes of elderflower and chamomile, dry fruits and citrus, along with a fine balance of spice and acidity. The Algonquin cocktail is named for the Algonquin Hotel, which is composed of rye whiskey, Noilly Prat and pineapple juice. Noilly Prat now makes Red and Ambre vermouths as well, introduced in the 1960s and 1980s, but they are less widely known. Noilly Prat (pronounced Nwa-ee Prat), known as 'the Rolls Royce of vermouths', is recognised by barmen all over the world as a premium cocktail ingredient.However, in 2009, the extra-dry Noilly recipe exported to the USA was replaced by the original dry formula used worldwide. The blend is transferred to large casks and a secret blend of 20 botanicals (including Roman chamomile, yellow gentian, nutmeg, and bitter orange) is added by hand each day in a gentle maceration lasting 3 weeks, after filtration, the wines rest for 6+ weeks before bottling. The Noilly Prat company is based in Marseillan, in the Hérault department of southern France (it lies some 50 km west of Montpellier) and exclusively use white grape varieties grown in the Marseillan area.

A unique stage in the creation of Noilly Prat Original Dry involves a selection of wines being aged outdoors in oak casks exposed to the natural elements. Noilly Prat is widely used in cooking, and extensively used for sauces, especially to accompany fish.

It makes for a mean martini and, in good time for Summer, I must share with you one of my favourite drinks for when it’s hot: pour a generous amount of Noilly Prat into a glass, tumble in ice cubes, top up with soda water or fizzy mineral water, and drop in a few fresh mint leaves.
